There are a lot of benefits when cooking with steam, over other cooking methods. Cooking with steam better preserves the texture of your food and their vitamins and nutrients a lot better, resulting in healthier cooking. In addition, the food you cook will maintain its moisture, adding flavor without having to use butter or oil. Because it’s a moist cooking environment, most ovens will use natural convection heat in steam, liquid or air to heat and cook the food compared to other cooking methods that use dry heat which results in dry, over cooked food. Steaming works especially well for delicate foods like scallops or for creating flaky crusts on croissants or pastries or even steaming vegetables.

Reheating leftovers like Mac and Cheese is way better in a steam oven because it adds moisture and doesn't over dry like a microwave or regular oven. Steam also eliminates taste cross over, so you can cook different items while all will retain their original flavors. Steam ovens have become more popular and are now produced by more manufacturers.

Miele is a privately owned German manufacturer. They still produce almost all their products, including controls and components. Such manufacturing competence has allowed them to create the "Master Chef" intuitive touch screen. It will have pre-programmed settings for various foods, making it effortless and very easy to experiment with new recipes. In addition their exclusive “Clean Touch Stainless” will reduce the appearance of finger prints. In terms of overall reliability, Miele has always been ranked the best in terms of least serviced brands at Yale. In fact it is more than 50% better than the average.

Wolf is a family owned American subsidiary of Sub-Zero. They are almost a mirror image of Miele. Their steam oven, however, is manufactured in Switzerland. They do not directly manufacture this steam...at least not yet.

The big difference with a Wolf Steam oven is its Convection Steam feature. Convection steam is steam with heat added. This allows you to cook virtually anything in a Wolf Steam oven. In addition Wolf will offer “Gourmet Mode”. This is a sensor that automatically adjusts cooking time to the type and amount of food being cooked. This will help reduce the likely hood of food being cooked under or over done.

I like the Wolf Steam Oven. Not only does it offer the ability to steam but you can also cook and bake foods like cakes, and roasts. It’s truly a second oven. In addition, compared to the Miele, the Wolf interior capacity is larger, and the water location on the Wolf is in a better place. On the Wolf, the water reservoir is on the top part of the control panel. If you needed, you can always add water, without having to open the oven door. The Miele’s water compartment is accessed by opening the oven door, potentially letting any steam escape the oven, if opened during a cooking cycle.

The Miele, however, is less expensive, incredibly reliable and really simple to use. In my opinion, it is really up to you and how you will use it as the benefits of both products are incredibly different.
