Induction vs Pro Cooking

The hottest professional gas product is the Capital Culinarian. Have a look at this beast:

Capital Culinarian CGMR484GG2N: The Capital Culinarian is a throwback to the original commercial professional gas stoves.  Its open burner design delivers 22,000 BTU.  That's hot. The average professional range is 16,000 BTU with the average stove being about 12,000 BTU.

But is it hotter than an induction cooktop?

Bosch NIT8653UC: Induction is faster than any gas range, even the Capital.  Induction is 90% efficient versus 60% for gas, so more actual energy is actually expended cooking the food rather than lost as heat emission.

Benefits of Induction:

  1. 90% Efficient versus 60% gas and 55% electricity
  2. Instant response for simmering or heating
  3. Less heat emission (heat lost) means less heat in the kitchen, less HVAC costs and less venting costs. You do not need a professional hood with induction.

Why do you say you do not need a hood with induction?

You do not need a PRO hood, because there is far less heat emission with induction
