Well, we have 5 sure fire tips for the perfect burger

  1. Fat-to-Protein Ratio: Make sure you have the right fat-to-protein ratio. When selecting your protein of choice, choose ground meat or poultry with around 15-20% fat content. Fat ensures that the meat stays moist throughout the grilling process. Ground meats with very little to no fat will result in drier and tougher finished products.
  2. Season Meat: Try experimenting with seasoning packets and sauces; when they are mixed into the ground protein, they can add additional flavor and ‘pop’ to your burgers. Adding salt to the meat helps retain some moisture... however, when seasoning meat, mix right before cooking, until just combined, being careful not to over-work the protein. If you do not want to season the interior meat, then season the formed patties generously with salt and pepper just before grilling. If you season too far in advance, this will result in a mushy burger.
  3. Shaping: When ready to shape the burgers, wet hands before handling which will make it easier to form the burgers. Gently shape burgers, press a small dimple in the center of each burger and chill for 30 minutes.
  4. Grilling: Before grilling, preheat grill to medium high and make sure it is very hot. Brush burgers with a small amount of oil and place on the grill. Abstain from closing the lid and pressing on the tops of the burgers which essentially forces out natural juices. Flip burgers once during the grilling process, but feel free to move them once per side to develop cross marks. For medium-rare to medium, grill each side for 2-3 minutes; for medium well to well doneness, grill each side for 4-5 minutes.
  5. Rest: Very important step! Let burgers rest about 5 minutes after grilling. Resting helps redistribute the juices in the burger instead of running out onto the plate.
